While on Vay-k I gave my diet the ole heave hoe and decided just to eat what I wanted. Luckily, the majority of the time, what I wanted was pretty healthy food (just the idea of getting back to where I was scared me to death) so over the course of a week, A WEEK!!! I gained back 6 lbs! I couldn't believe it. So! Back on my healthy eating train I boarded that next Monday and this is what I made myself for breakfast to kick it off.
Tomatoes are definitely a part of my diet that keeps it all possible and I'm so thankful for them.
This year, my husband planted orange tomatoes... yeah - I don't know the name of these particularly - that's Ben's job, he's the gardener of the family.
This picture totally doesn't do them justice, I mean they are BRIGHT Orange!
They're amazing to look at AND to eat. Very sweet with the perfect amount of tanginess.


I ADORE them!
I'm a huge fan when food can be appealing to the eye and the buds.

I started by chopping up two tomatoes,
placed them in a bowl and salt and peppered them.

Then I placed to over-medium eggs atop the deliciousness bed of tomatoes
and again with more salt and peppa.
The perfect little bowl of sunshine to start your day off right.
