While on Vay-k I gave my diet the ole heave hoe and decided just to eat what I wanted. Luckily, the majority of the time, what I wanted was pretty healthy food (just the idea of getting back to where I was scared me to death) so over the course of a week, A WEEK!!! I gained back 6 lbs! I couldn't believe it. So! Back on my healthy eating train I boarded that next Monday and this is what I made myself for breakfast to kick it off.
Tomatoes are definitely a part of my diet that keeps it all possible and I'm so thankful for them.
This year, my husband planted orange tomatoes... yeah - I don't know the name of these particularly - that's Ben's job, he's the gardener of the family. This picture totally doesn't do them justice, I mean they are BRIGHT Orange! They're amazing to look at AND to eat. Very sweet with the perfect amount of tanginess.

I'm a huge fan when food can be appealing to the eye and the buds.
I started by chopping up two tomatoes,
placed them in a bowl and salt and peppered them.
Then I placed to over-medium eggs atop the deliciousness bed of tomatoes
and again with more salt and peppa.
The perfect little bowl of sunshine to start your day off right.
Can you say YUMMY?
