The other night I was making dinner. Chicken Breasts were getting ready to be grilled and I was having a hard time figuring out what I wanted as a side dish. I had some rice left over from the night before and I didn't want plain rice. ick!
I decided it sounded good to have some form of Cheesy Rice. So I started making a roux like I would if I was starting to make homemade mac-n-cheese. Put in some milk and cheese. Microwaved some frozen broccoli and chopped it up real fine, then added my cooked brown rice.
Recipe:
4T of butter
2T flour
3 c milk
1t onion powder
1t garlic powder
1/2 black pepper
1/2 salt
2 1/2 c graded cheddar
1 1/2 c chopped broccoli
2 1/2 c rice
Start by getting broccoli ready by microwaving or steaming and chop finely and set aside.
Then put butter into bottom of pan ( I use my deep teflon pan - a pan I also use for making goulash type dishes)
add flour and on medium heat cook the flour - making sure to move it around with a whisk. Cook for about 4 good minutes. Add seasonings at this point.
Add milk and make sure to whisk briskly - mixture will thicken. Once it is thick to the point of coating the back of your spoon and leaves a line when you draw through it with your finger - you know it is thick enough.
Add cheese - mix thoroughly then add broccoli and rice. Make sure it is cooked down and not too runny before your serve (cooking on a medium heat).
Pauly kept taking bites and saying "yum yum mom!" FINALLY! He will eat something. I guess this is going to be a regular - for him anyways :) He even ate it for lunch the next day!

Hey Lady! In regards to homeschooling and getting on the same page. I recommend reading Family Driven Faith by Dr.Voddie Baucham and for understanding educational reasons why not to send your kids to school read Dumbing Us Down by John Taylor Gatto. He basically gives a perspective that has not connection to spiritual beliefs but rather how school is set up to create mediocrity, failure and low expectations for themselves and everyone around them.
